we grew pimento peppers for the first time this year
the hubs & i both love pimento cheese sandwiches
so we thought
why not grow them
we planted two plants & yesterday the hubs brought in the harvest
5 peppers...yep only 5
it's been a tough year for our garden but we have canned, frozen & dried everything we could
these were super easy to do
we washed them, cut off the stem & removed the ribs & seeds
quartered them & layed them out on a cookie sheet
& roasted them @ 450 for about 30 minutes
transferred them to a bowl & covered with plastic wrap
& let them sit for about 20 minutes
this helps removes the skins
we then diced them
and put them into little jars & put them in the freezer
i save just about every glass jar i get
the hubs thinks i have a problem...lol
and maybe i do
but.......
when i needed little glass jars to put our pimento peppers in
i had only to go to the basement

my grandmother made the best pimento & cheese sandwiches on soft white bread with the crust cut off...thank you for reminding me of this sweet memory

I loved pimento cheese! It has only been in the last couple of years I was introduced to this wonderful spread, by my sister's southern MIL. I can't imagine how incredible it would be with roasted canned pimentos.
